Ingredients Pancake ingredients 280g plain flour 450ml whole milk 4 tbsp butter, melted 3 large, free-range eggs 3 tbsp good quality cocoa powder 3 tbsp instant coffee 2 tbsp caster sugar 2 tsp vanilla essence 2 tsp baking powder 1/2 Tsp baking soda Pinch sea salt Cream filling 240ml double cream 115g mascarpone cheese 2 tbsp Tia Maria 2 tbsp maple syrup Topping Cocoa powder Handful toasted almonds Directions 1. Firstly, make the cream filling. Beat all of the ingredients in a medium bowl and whip until you have soft peaks. Set aside in the fridge while you prepare the pancakes. 2. In a large bowl, sift the flour and cocoa powder. 3. Add the sugar, baking powder, baking soda, and salt. 4. In a separate bowl, mix the milk and instant coffee powder until fully dissolved.
